Sausage, Mushroom, and Onion Frittata

We had some deer sausage--yes deer sausage--in the fridge leftover from this past weekend that needed to be used up this week.  I am still learning to embrace deer meat, but I feel like I need to try harder because Eric loves it and our freezer is always full of it after deer season.  I am more prone to eat the deer sausage than the ground beef because it's usually got a lot of spices that mask the gamey flavor.

I decided that I wanted to go the breakfast route with the leftover sausage this time and finally decided on a Breakfast Frittata.  It was super easy, and quick to make.  I liked that there were only 4 eggs in this recipe.  Most frittata recipes I've come across have at least 6-8 eggs in them.  Plus I was able to add things that we really like to eat to the recipe!


Ingredients:

4 eggs
1/4 cup milk
12 oz ground sausage
1/2 cup chopped onion
3/4 cup chopped mushrooms
garlic salt
4 oz shredded cheese (I used Mexican Cheese blend b/c that's what I had in the fridge)


Directions:

  1. Turn oven on to Broil.
  2. Whisk eggs and milk together in a bowl, set aside. 
  3. Brown sausage on medium-high heat in a 12" ovenproof skillet.  Transfer sausage to a plate to drain fat.  Since I used deer sausage there was not a whole lot of fat to drain (a plus for deer meat).
  4. Sautee mushrooms and onions with a pinch of garlic salt in the skillet you used for the sausage. 
  5. Turn burner down to medium-low. Combine sausage with mushroom/onion mixture in the skillet.  Pour the egg/milk mixture over the sausage, mushrooms, and onions, and stir until mixed.  
  6. Cover skillet and cook on medium-low heat for 10 minutes or until the middle is set.  
  7. Remove lid and top frittata with cheese. Place uncovered, on the top rack of the oven for 1-2 minutes. Keep a close eye on it as the broiler will work VERY quickly!
  8. Remove from oven and serve immediately!
I served mine with some homemade Baking Powder Biscuits.  <= My go-to biscuit recipe.  I use buttermilk to give them more flavor and cut the recipe in half if it's just Eric and I.   

The dinner earned rave reviews, and was even suggested as a Christmas morning breakfast.  We may have to change up some traditions and try something new this year.  Maybe.  =)

Couponing Week of 9/26-9/30


This time of year is really busy for us so we tend to just grab whatever is handy, especially when we are on the go.  I have been trying really hard to cook at least 3 times per week lately.  Because I try to make sure we have things we can grab quickly, it makes couponing a little more difficult, but I am managing. 

Last week I ended up making 3 trips to the store (the second Publix trip was strictly to pick up some items that were on sale, but the sale ended Friday so I had to pick up a few things. 

The proof::

My first Publix haul last week included:

4 bottles Coffee Mate Creamer @ $ .66ea = $2.67 (on sale 3/$5 + 4 x $.50 [dbl] off 1)
2 cans corn @ $ 0.75ea = $1.50
1 can diced tomatoes = $ .89
1 jar Texas Pete Hot Sauce = $1.79 ($ .40 [dbl] off 1, also received FREE bottle TP Buffalo Sauce wp)
1 jar Texas Pete Buffalo Sauce = FREE (Free with purchase of Texas Pete Hot Sauce)
1 container black pepper = $2.49 (hubby’s request, but on sale for $2.49)
1 bag Texas Toast Croutons = $1 (on sale 10/$10)
1 bag Santarita’s corn chips = $2
1 bag Publix hamburger buns = $1.29

I spent $15.53 and saved $12.46 for a total percentage of savings of 45%.  Not bad, but not my best.  I did purchase several items that I absolutely had to have for planned dinners last week.  We used everything, so it was worth it. 


I also had to run by Winn-Dixie the same day to pick up the rest of the items I needed for dinners last week, plus a few extras (sorry, no receipt pic). 

My Winn-Dixie haul included:

~2 lbs ground beef = $4.76 (on sale $2.49/lb)
2 bags Pillsbury Sweet Moments Desserts for $1.40ea = $2.80 (on sale 2/$5 + 2 x $1.10 off 1)
2 bags Kraft Shredded Cheese for $3.75 ea = $7.49 (on sale 2/$7)
3 containers Wholly Guacamole for $ .83ea = $2.50 (2 x $1.50 off 1 and 1 x $2 off 1)
3 bottles Dawn Dish Soap for $.50ea = $1.50 (on sale (10/$10 + 3 x $.25 [dbl] off 1)

I spent $21.48 and saved $19.73, for a total percentage of savings of 48%. Once again not bad, but not my best.  If I didn’t like cheese so much, it would be cheaper =).  And the reason I bought shredded cheese instead of block cheese is because the block cheese was NOT on sale and I refuse to pay over $3 for an 8oz block of cheese!


There were a few deals in this month’s Yellow Advantage Flyer from Publix that I just HAD to take advantage of so I could stock up on some things for the next few months.

I spent $21.60 and saved $31.69, for a total percentage of savings of 59%.  I was quite pleased with my savings on that day.  Yes I am aware that I have purchased 10 bottles of creamer in one week.  I recently discovered that you can freeze it for a few months, so I decided to stock up on the small bottles while I had coupons readily available since I cannot drink coffee without flavored creamer (their Peppermint Mocha flavor is the greatest thing that ever happened to my morning coffee!) 

Although I went to the grocery store 3 times last week, I spent a total of $58.61, but I saved a total of $63.88, for a total percentage of savings of 52% for the week.  Not a bad week in my book!

Girls Weekend in the Ham

That's Birmingham for those of you not famililar with Alabama city lingo....Birmingham is called "the Ham" and Montgomery is known as "the Gump." Not sure why but it works I guess.

My FSIL and I got out of the country this weekend and headed north to the "big city" (ok not really big city, but city none the less) for the weekend.  We had some wedding business to take care of for her big day that will be here before we know it!

We got up there around 7 on Friday and decided we needed food.  After some contemplating we ended up going to PF Changs.  I had never been there and really wanted to see if it could live up to all of the hype that my dad gives it.  We didn't consider that it would be crowded on a Friday at 7pm.....silly us.  However, we conveniently grabbed a seat @ the bar shortly after we arrived and we able to eat there sans the 45 minute wait.  I am happy to say that it lived up to my expectations.  I had the Orange Chicken (which my dad always raves about) and we shared some lettuce cups......YUM!  I am now determined to recreate both of these dishes at home.

Saturday morning we got up and decided we wre going to jump start our day with a Turbo Kick class @ the YMCA.  I have taken Turbo Kick before and I have the Turbo Jam DVD set at home, which I LOVE.  However, it has been a while since I have done either and that class whopped my butt!  I paid for it on Sunday, but it was sooooo worth it.

After out class we ran back to her parents' house to get ready for the reason for our trip......BRIDESMAID DRESS FITTING!  It was so much fun, and the dresses are GORGEOUS!  I can't wait for them to come in! When we finished with our dress fitting we headed over to a place called Olexa's for lunch.  We went there because they will be making my FSIL's wedding cakes and she wanted us to try them.  She has always said how good they were and I didn't realize how good they were until we tasted them...OMG.  It was like heaven.  I was so glad we worked out Saturday morning because that cake was uh-maz-ing.  I cannot wait for the wedding...I am going to eat @ least 3 pieces (probably more).

We did a little shopping after we ate, and got inspired to do another craft project, surprise surprise!. I had some Penzey's FREE spice coupons that I wanted to use up before they expired and since the closest Penzey's is in Birmingham, I always try to go by.  This month I got 3 FREE spices, so I couldn't pass it up!

While we were at Penzey's we stopped at a little boutique in the next shop over that had really cute DIY-like products that were all made in AL.  I have had a recent obsession with burlap crafts (although I have yet to make one) and have been looking for ideas.  They had those really cute burlap footballs that have been all over Pinterest.com lately, and we decided that we HAD to make some.  Despite the fact that we both had several yards of burlap @ home, we set off to find some in Birmingham and on our second stop found some!  We spent the rest of the afternoon watching Auburn get lucky again and Alabama dominate again, and made our super cute footballs!  I opted for a Huntingdon Hawks themed football to show some support for Eric's and my Alma Mater.


Sunday we headed back to reality, but due to the fact that it was an absolutely gorgeous fall day I didn't mind it one bit!  I got to spend the afternoon outside with my wonderful husband and our wild and crazy boys!

I hope this week goes quickly becuase I am R-E-A-D-Y for HC Homecoming this weekend.  I can't wait to  see all of our college friends and watch some HAWKS FOOTBALL!
