I am still working on getting caught up due to my posting hiatus over the holidays. I got a few new cookbooks for Christmas so I decided to start out 2013 with a few new recipes. Growing up Mom always made corned beef, cabbage, and black eyed peas on new years. I decided to forgo the black eyed peas since I don't like them and have no clue how to cook them (hopefully I won't regret it), and focus on the corned beef and cabbage. One of the cookbooks I received is
Slow Cooker Quick Fixes by the editors of
Southern Living and it had a Cranberry Corned Beef recipe that looked delicious, so I tried it.
Cranberry Corned Beef with Horseradish Sour Cream
What you need:
15 baby carrots
1 large onion sliced into 6 wedges
1 3-4lb corned beef brisket
seasoning packet from corned beef
1 can whole berry cranberry sauce
1 can jellied cranberry sauce
2 packets dry onion soup mix
1/2 cup sour cream
4 tsp prepared horseradish
Place carrots and onion in the bottom of a 5 quart slow cooker.
Cut excess fat off of corned beef brisket and place brisket on top of carrots and onions. In a bowl,
mix both cans of cranberry sauce with soup mix.
Pour mixture over corned beef.
Cook on high for one hour, and then on low for 8 hours. While corned beef is cooking,
mix horseradish and sour cream in a small bowl and let chill for several hours.
Serve with corned beef.
Oh man was this good! The horseradish sour cream was the perfect match for the cranberry sauce. Eric decided to put his corned beef on an onion bun and top it with
Slawsa and was very pleased with his decision.
For our cabbage I decided I wanted to try something new. I am not a huge cabbage fan since it does not have a lot of flavor, but Eric loves it, so I googled "best cabbage recipe" and got this one from Emeril. Let me just say the man knows his cabbage. It was not the healthiest recipe but it made for some dang good cabbage.

What you need:
1/2 pound bacon, coarsly chopped
4 cups thinly sliced onions (since I used my onion in the corned beef, I re-hydrated some dried minced onions and used them instead)
1 1/4 tsp salt
1/4 tsp cayenne pepper
3/4 tsp freshly ground black pepper
1/2 tsp sugar
3 bay leaves
1 head green or white cabbage, cored and thinly sliced
1-12oz bottle beer (I used MGD 64 since that's what we had in the fridge)
Cook the bacon in a large heavy pot or Dutch oven (used my large frying pan since I halved the recipe), until browned and slightly crispy, about 5 mins.
Add the onions, salt, cayenne pepper, black pepper, sugar, and bay leaves.
Cook, stirring, until onions are soft, about 5 mins.
Add the cabbage and stir to mix well.
Cook, stirring until the cabbage begins to wilt or soften, 3-4 mins.
Reduce the heat to medium-low, and
add the beer. Stir to mix.
Cover and
simmer, stirring occasionally, for 1 hour.
Remove the bay leaves.
Remove from heat and
serve warm.
I halved the recipe and it was plenty for the 2 of us. Eric asked me to hang on to this recipe to make again, so I must have hit a winner!
For dessert Eric opted for the same thing he ate for breakfast. Muddy Buddies in milk. He said they tasted like Cocoa Puffs. Who knew?
I have got to get back on the cooking band wagon....let me rephrase that. I have to get back on the HEALTHY cooking band wagon. It's going to be difficult with basketball this month, but I am going to try! If anything I can put together some recipes and meal plans to start using in February.
